HICKORY SMOKED TURKEY

HICKORY SMOKED TURKEY.
Use a water smoker. Brine (SUBMERGE) the turkey in a 1:1:1 salt:sugar:water solution for 24 hours. This is possible outdoors if you do it now and you use a cooler or 5 gallon bucket with a cover. Otherwise youre gonna need an extra fridge or a dang big fridge.
Stuff the turkey with orange peels and add SECRET RUB. for details on this secret rub send me a note.
Smoke it for 20 hours at 220.
USE wet hickory wood and even heat. Electric cooks more constant.
I use a brinkmann electric cylinder smoker. 50-60 bucks.
